Strawberry Mango Jam

I purchased a case of yummy strawberries from Bountiful Baskets Co-op this past week. I also received a couple of delicious mangoes. So I immediately decided that I needed to create a Strawberry Mango Jam. It just sounded like something heavenly, and now that I have made it, I can tell you it is definitely out of this world delicious. I now have a new favorite jam.
Not a bad way to start my week, I must say. I am thrilled this made so many jars, though I can tell I am going to have to make more to feed my new addiction.
Here is what you will need to recreate my fantastic concoction:
3 lbs strawberries, crushed (makes about 5 cups)
2 large mangoes, pitted and chopped fine
2 TB lemon juice
1 package SureJell pectin
5 cups of sugar
Place prepared fruit in a large pot. Add lemon juice and pectin. Stir over heat until it reaches a rolling boil. Quickly add sugar and stir over heat. Boil for 1 minute more. Turn off heat. Skim foam from prepared jam.
Ladle jam into hot jelly jars. Wipe jar rims clean and seal. Process in boiling water bath for 10 minutes.
Yields about eleven 8-ounce jars.
Now go and get some bread, rolls, or biscuits to spread it on and enjoy!

Oh my! I don’t know the first thing about canning, making jams and all that jazz. . .but, I must say that you have inspired me! I have to learn how to do this. Enjoy that jam, it sounds delicious.
Just made this tonight. Of course, I varied it a little bit but I always came back to your recipe to keep me on track. Thanks so much. I cooked it with a vanilla bean in it and then scraped the seeds into the hot jam before canning. It is absolutely wonderful.
LOVE LOVE LOVE this! I just happened to have some strawberries that were past the point of eating but still usable for cooking and a few mangos left from a case of that were on sale last week. I modified it a smidge because of how little strawberries I had and it still turned out perfectly! 2 cups strawberries, 2 ripe mangoes, 1 cup mango juice, 2 tbsp lemon juice, 1 package of pectin crystals, 5 cups of sugar and a vanilla bean. I boiled the whole bean in the jam mixture and used just half of the bean seeds, I’ll double next time (yes there will be a next time, may be later this afternoon after I go to the store! lol) and use all of the vanilla bean seeds, may be triple to use the other half of the one I used just now. Oh, and I saw that your fruit settled to the top so I let my jam sit in the pot after I turned off the heat for 7 minutes instead of the pectin packages recommended 5. Then I just hot packed the jars and plan on keeping them in the fridge because they are sure to go quick! Thanks so much for the inspiration!
