Menu Plan Monday-September 6
By Brenda EmmettI haven’t posted a meal plan again for a couple of weeks. Part of the reason is that I had an eye surgery on the 23rd of August and I have had a difficult time blogging. It has been frustrating to make my eyes work together and computer work has been very hard to do. I’ve been spending my time doing the computer work I absolutely HAVE to do for my job and letting the other work take a backseat.
However, I thought I would make myself do it this week. I really like to have a plan in place and it eliminates the “What’s for dinner?” questions I am inevitably asked when I don’t have one. What I am saying is that meal planning gives me a little peace.
Here is what we are having for dinner this week:
Monday– Sloppy Joes, Coleslaw, Sliced Tomatoes & Cucumbers, Turtle Brownies
Tuesday- Ham & Cheese Scalloped Potatoes, Fresh Fruit
Wednesday- We have a church Harvest Dinner this week. But I am taking a dessert. I’m thinking of doing something with peaches.
Thursday- Hamburger-Rice Casserole, Rolls
Friday- Homemade Pizza, Cheesy Salad, Ice Cream
Saturday-Crockpot Lasagna, French Bread, Green Beans (I’ll post the recipe for the Crockpot Lasagna later this week.)
Sunday–Beef Enchiladas, Salad

I like your menu! We just used up the last of our ground venison from last winter, so I need to start buying ground chuck again at Sam’s Club, and it would be fun to try a new recipe or two. The Hamburger-Rice Casserole and the Crockpot Lasagna sound like two good recipes to try out on my crew!
