Oatmeal Muffins

This is a yummy and very easy muffin recipe.  It goes well as a side for soups and other comfort foods, as well as a great muffin for breakfast time.  With the added addition of the oatmeal, it is chock full of nutrition as well.  Enjoy!

1 C Flour

1/4 Cup Sugar

3 tsp. Baking Powder

1/2 tsp. salt

1 Cup Quick-Cooking Rolled Oats (I have used Regular and Steel Cut Oats as well without any problems.)

1 Slightly Beaten Egg

1 Cup Milk

3 TB Oil

Sift flour, sugar, baking powder and salt together.  Add oats.  Add egg, milk and oil, stirring just to moisten.  Fill 12 greased muffin pans 2/3 full.  Bake at 425 * about 15 minutes.
